We have taken half a cup of oats, it is roasted oats and half a cup of gram flour, you can also add semolina instead of it, half a cup of curd, you can also add lemon juice in its place, mix all three.

Add 3 tbsp of water gradually and mix well

Leave the mixture for 10 mins to puff

You leave it for 10 minutes, it will swell further and till the time the oats are ready, we can make the chutney for the idli.

To prepare chutney, add 1/2 cup grated narial , 1/4 cup roasted chana, 1/2 tsp salt, 2 green chilli, 1/2 lemon juice, 1/4 cup water, and blend

When we bring coconut, we cannot keep it for a long time, grate it and keep it in the freezer and whenever we have to make chutney, take it out from the freezer a little before and make it.

Cut gram, salt and chillies into big pieces and add them and squeeze the juice of lemon and add one-fourth of water to it and grind it lightly.

Heat 2 tsp of oil in a pan to prepare tadka for chutney

Prepare the tadka for the chutney. Heat the pan and add two teaspoons of oil in it. Let it become hot.

Add 1/4 tsp of mustard seeds, 2 red chilies, and 10-12 curry leaves to the hot oil

Add one-fourth teaspoon mustard seeds and two red chillies. The flame is very slow. Now add 10-12 curry leaves.

Turn off the flame and add 1/4 tsp of red chilli powder to tadka

Now add one fourth Kashmiri red chilli, this will improve the color of the chutney and the taste will also be good.

Add tadka to the chutney and mix well

Now we will add this tadka to the chutney and mix it well. Now this chutney is ready and in this time our batter has also swelled and is ready, it looks thick.

If the batter seems a little thick, add some water to it and add half a teaspoon of salt or as per taste. Mix well. We want this kind of consistency for idli, neither too thick nor too thin and we have used half the batter to make the batter.  Had taken cup of water, two tsp water is left, batter is ready, now let’s prepare to cook idlis.

Prepare a vessel and pour 2 or 2.5 cups of water into it

We take a vessel and put two and a half cups of water in it and heat it.

Add 3/4 tsp of Eno fruit salt to the batter and mix well

We took three teaspoons of Eno fruit salt, mixed it well and saw that as soon as we added eno, it started rising.

Divide the batter into greased plates and place them inside the streaming vassel

Now fill this batter in plates and if any batter is left, it can be used later.

Steam the idlis over medium flame for 12 minutes

Steam is forming well in the water. We have slowed down the flame so that the steam is less and we put the plates in it. Now we cover it. We turn the flame to medium so that steam continues to form and fry the idli on medium flame.

Let’s boil it for 12 minutes. We cooked it for 12 minutes. Now let’s check. You can check by inserting a knife. There is no batter in the knife at all. Now turn off the flame.

Take out the plates and keep them in the net so that Let it cool down a bit. When it is done, take them out from the plates. Take them out with the reverse side of the knife. The idli is very spongy.
