  • 1 cup frozen edamame beans, shelled
  • 1/2 cup chickpeas, drained and rinsed
  • 2 cloves garlic, minced
  • 2 tbsp tahini
  • 2 tbsp lemon juice
  • 1/4 tsp cumin
  • 1/4 tsp salt
  • 2 tbsp water
  • 4 whole wheat tortillas
  • 1 red bell pepper, sliced
  • 1 cucumber, sliced
  • 1 carrot, grated
  • 1/4 cup crumbled feta cheese (optional)
  • Fresh parsley leaves, chopped (optional)

  1. Bring a pot of water to boil and add the edamame beans. Cook it for at least 2-3 minutes and then filter it and wash it with cold water.
  2. In a food processor, combine the cooked edamame beans, chickpeas, garlic, tahini, lemon juice, cumin, salt, and water. Blend until smooth and creamy.
  3. Lay the tortillas flat and spread the edamame hummus mixture over them, leaving a 1-inch border around the edges.
  4. Layer the sliced bell pepper, cucumber, and grated carrot over the hummus.
  5. Sprinkle the feta cheese (if using) and chopped parsley leaves over the vegetables.
  6. Roll up the tortillas tightly, tucking in the sides as you go.
  7. Serve immediately or wrap tightly in plastic wrap and refrigerate until ready to eat.
