10 Steps to Healthy Sweet Potato Falafel with Garlic Yoghurt: A Must-Try Snack

1 large sweet potato, peeled and grated • 1 can chickpeas, drained and rinsed • 1 small red onion, chopped • 2 garlic cloves, minced • 2 tablespoons 

Ingredients

• 1 cup plain yoghurt • 1 garlic clove, minced • 1 tablespoon chopped fresh parsley • Salt and pepper to taste

Garlic Yoghurt Dip

Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.

Instructions

In a large bowl, combine the grated sweet potato, chickpeas, red onion, minced garlic, chopped parsley, ground cumin, ground coriander, salt, black pepper, and all-purpose flour.

Use a tablespoon to scoop out the mixture and form into balls. Place each ball on the prepared baking sheet.

Brush the tops of the balls with olive oil.

Bake the sweet potato falafel for 20-25 minutes or until they are golden brown and cooked through.

While the falafel is baking, prepare the garlic yoghurt dip. In a small bowl, mix together the yoghurt, minced garlic, chopped parsley, salt, and pepper.
